The Art Of Rodizio
A few centuries ago, before refrigerators and microwaves; gauchos ( South Brazil’s Cowboys ) would live off the land and the cattle they raised; gathering around a large firepit, they would grill large amount of meats ( so not to go bad ) and shared them with families and friends. The slow cooking resulted in a juicy, flavorful taste which was quickly adapted throughout the counttry given the name ‘Churrasco’ and this tradition is carried on until this day.
But What’s Rodizio?
Back in the 60′s, a waiter at a busy churrascaria mixed up quite a few orders delivering wrong type of meat to the tables. To correct this mistake, the manager quickly asked the waiters to bring over several skewers to all the tables…and with that, Rodizio was born!
Our unique concept
Rios features continuous table side service of fourteen* different delectable cuts of beef, pork, lamb and chicken. Our concept also offers a sumptuous buffet of gourmet salads and fresh cut vegetables, and a variety of traditional side dishes to complement the meats.
Customers control their services with a small green and red-side chip. The green side signals the chefs to bring out skewers of sizzling meats to the table, while the red side indicates a stopping point. To resume service, simply display the green side again.
Rios is the ideal place for both business and leisure dining. It awes customers with quality, delicious food and excellent service, while keeping the culinary tradition alive.
